Recipe by: Peggy Dyson-Cobb of Lexington, VA Courtesy of Sustainable Table ® Description: Makes 2-3 quarts eggnog, depending on how fresh the cream and egg whites are! Try it - you'll never want 'boughten' eggnog again! Ingredients: 4 eggs, separated
1/2 cup sugar
1/3 cup dark rum
1/3 cup bourbon
1/4 tsp. salt
1 pint whipping cream Directions: Beat egg yolks and sugar til smooth and thick. S-l-o-w-l-y add liquor while continuing to beat. Chill, covered, for 2-3 hours. Then beat egg whites and salt to soft peaks. Beat cream to soft peak, and fold yolk mixture gently into cream. Fold beaten egg whites in, sprinkle with nutmeg, and chill if you can stand waiting. Tips: Be sure to buy organic dairy, or even better, buy your dairy from a small farm. Peggy gets her cream through participating in a cowshare program. She owns a share of a Jersey cow on a local farm, and pays board fees for her portion of the cow's care costs, while getting weekly installments of her portion of what her cow produces.
