Sustainable Table Recipes: Huckleberry Pie

Description:
This unique pie uses whipping cream to create a berries-and-cream filling. Huckleberries are similar in taste to blueberries -- substitute blueberries, marionberries, or other summer berries if huckleberries are hard to find!

Ingredients:
1 single crust pie shell (for 8- or 9-inch pie)
4 cups huckleberries
1 cup sugar
2 tablespoons flour
a teaspoon salt
2 local, pastured eggs, beaten
®ù cup whipping cream

Directions:
Prepare standard single-crust pie crust (do not bake).  In a medium bowl, combine eggs, sugar, salt and flour. Gently stir in the huckleberries. Pour into the unbaked pie shell. Slowly pour cream over the top, being sure to cover the entire area. Bake at 375F for 10 minutes. Reduce heat to 350F and bake a further 50 minutes or until the filling has set. Serve hot or cold with vanilla bean ice cream.
