Recipe by: Karen Hudson Courtesy of Sustainable Table ® Description: A tradition in the Hudson family home! Cook time: 35 min Ingredients: 2 cups flour
1 cup organic quick or old fashioned oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup organic butter, softened
1 cup firmly packed brown sugar
1 cup granulated sugar
1 organic egg, slightly beaten
1 teaspoon vanilla extract
1 cup solid pack canned organic pumpkin or fresh cooked mashed pumpkin
1 cup bittersweet chocolate morsels
1 cup raisins
Assorted candies, such as candy coated chocolate drops, icing or peanut butter Directions: Preheat oven to 350 degrees. Combine oats, flour, baking soda, cinnamon and salt. Cream butter. Gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin. Mix well after each addition. Stir in bittersweet chocolate morsels.
For each cookie, drop 1/4 cup of dough onto a lightly greased sheet. Spread into a pumpkin shape using a thin metal spatula. Bake 20 to 25 minutes until cookies are firm and lightly browned. They will spring back when touched. Remove from sheets and cool on paper or metal racks. Decorate using icing or peanut butter to affix candies and raisins. Makes approximately 20 cookies.
