Recipe by: Karen Hudson Courtesy of Sustainable Table ® Ingredients: 12 medium or large organic red potatoes
6 hard boiled free range eggs sliced
½ green pepper chopped
¾ cup mayonnaise
½ cup grass fed sour cream
1 small minced onion
2 ribs celery thinly chopped
2 Tbs sweet pickle relish
1 Tbs parsley
2 Tbs organic sugar or agave to taste
Sea salt to taste
A squirt or two of organic yellow mustard
Paprika Directions: Peel and cube potatoes in 1 cubes Cook potatoes until tender but still firm Rinse in COLD water Add rest of ingredients and mix well Chill 4 hours or more before serving Sprinkle with red paprika for garnish Recipe Number 54 added on 2006-10-05
