Sustainable Table Recipes: Fire roasted sweet potatoes with garlic

Ingredients:
Sweet Potatoes
Garlic
Salt
Pepper
Olive oil (optional)
Foil

Special Equipment:
Grill or campfire

Directions:
On our honeymoon in Tishomingo state park, Mississippi, we roasted sweet potatoes with garlic. Take whole yams, cut them in half lengthwise, season with salt & pepper, and press whole cloves of garlic in the split of the potato then press the 2 halves back together and wrap in foil.

Roast on the edges of the fire - when they are soft-ish to the touch, they are done. If you like, you can sprinkle the cut sides with olive oil before you season and garlic them - they were fine without, though.
