Sustainable Table Recipes: Oyster & Shiitake Mushroom Pie

Ingredients:
1 lb. oyster mushrooms, sliced
1 lb. shiitake mushrooms, sliced
1 cup organic butter
1 or 2 medium onions, chopped
1 tablespoon flour
1 cup heavy cream
2 tablespoons sherry or cognac
Salt and freshly ground pepper to taste
Pastry for a double crust pie(8 inches)

Directions:
In a large skillet, heat the butter and saute the onions and mushrooms for five to ten minutes. Stir in the cognac, salt and pepper. Add cream and cook until the mixture begins to thicken. Let the mixture cool while preparing your crust.

Preheat oven to 450F. Pour mushroom mixture into pie crust. Add a lattice top or get creative and add  hand cut pastry mushrooms or little animals! Bake for twenty minutes, or until crust is browned and filling is bubbly.
