The Weekly Pick--Solar Powered Cheese

Last Friday morning, we had a chance to chat with Jonathan White of Bobolink Dairy in front of his stand at the Union Square Greenmarket here in Manhattan. Jonathan and his wife, Nina, create some of the finest cheese we've ever sampled from raw milk from their grass-fed cows. The first time I met Jonathan, he proudly told me that his farm looked just like the idyllic farm at the beginning of The Meatrix. If you click on the link above, you can see the photos that prove his point. Anyway, they also sell suckled veal, grass-fed beef, whey-fed pork, and wood-fired bread. Here, Jonathan talks about what makes his cheese so awesome (hint: it ain't commercial feed or rBGH). We're happy to have Bobolinks listed in our Eat Well Guide, and we can't wait to get out on the road again to meet some of the other 9,000 folks we have listed.

I visited Bobolink and wrote about it here. It is a beautiful place, and Jonathan and Nina are gracious, kind people.
