ST: Beet Chocolate Cake from GRACE's CSA
Every week when we pick up our CSA vegetables in midtown Manhattan, we also get fabulous recipes for a featured vegetable in our shipment. We recently received a recipe for Beet Chocolate Cake, which may sound weird, but turned out to be absolutely scrumptious!
Read on to find out how to make cake with beets! The batter turns purple and the texture is moist and light.
Beet-Chocolate Cake Recipe - 10 Servings
Ingredients:
2 cups Sugar
4 free range organic eggs
2 cups flour
1/4 cup oil
3-4 ounces unsweetened chocolate
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
3 cups shredded beets
Directions:
Combine dry ingredients.
Sift or mix well together.
Melt chocolate very slowly in a double boiler.
Allow chocolate to cool, then blend thoroughly with eggs and oil.
Combine flour mixture with chocolate mixture, alternating with beets.
Pour into 2 greased 9 inch cake pans.
Bake at 325 for 40-50 minutes, or until a fork can be removed from the center cleanly.

The easiest way to melt chocolate is with the microwave. Works great. Recipe is fantastic. People don't believe there are beets in it.

I wonder if you could substitute a number of different vegetables in this recipe for an added dimension to chocolate cake. How about using fennel or rhubarb or corn?

To melt chocolate, I just boil some water in a larger pot and place the chocolate in a smaller pot that can rest inside the bigger one as the water boils. Works every time!

You can make a DIY double boiler with a frying pan and a small pot - heat some water in the frying pan, then put the chocolate in a small pot and place the small pot in the frying pan. just be careful not to burn yourself..
I enjoy my beets steamed. straight up. and the greens are great raw.

That sounds amazing. I'm going to try it this weekend! I'm not much of a cook, though, so I'll do my best. Anyone know another good method for melting chocolate other than in a double boiler?
