		<description>Glad to see that the concept of flexitarianism is getting out there.  I agree that a diet doesn&#039;t have to be black-or-white; even shades of gray can be beneficial for one&#039;s health and for the environment. 

To add another resource to the flexitarian&#039;s bookshelf...I use Peter Berley&#039;s cookbook &quot;The Flexitarian Table.&quot;  It&#039;s excellent.</description>
