		<description>A plug for ducks: We raise 7 ducks for eggs.  They have delicious eggs.  Oddly enough, we thought of selling them, but we can barely give them to our friends as gifts.  Americans have a hard time with nontraditional foods -- sad for them.
  Anyways, back to Ducks: Ducks are cleaner and cuter than chickens. Their eggs are pretty and come in several colors depending on species.  Fresh duck eggs yolks never break in the pan and actually bounce and are very tall (I am sure fresh chicken eggs are the same).  This year, for variety, we will probably add a few chickens too.  We may also add a light in the duck house to trick them into making winter eggs -- I am not sure that &quot;natural&quot; and &quot;seasonal&quot; is always the best !  I can&#039;t imagine what Minnesota folks would be eatin&#039; under that philosophy.</description>

		<description>Wow, thanks! Made this for dinner tonight with what I had on hand: watercress, beet greens, mint, parsley, thyme, chives, shallots,  lemon,  walnuts &amp; farm eggs - all from the farmers market.  I also shaved the tiniest bit of artisanal parmesan on top  HEAVEN - and so simple. I&#039;ll do this more often.

I also make a point of getting my eggs from a farmer I know from the next valley over. Stopping to chat with her every week, bringing my last egg carton back for her to reuse, having a small relationship with and supporting her and the other farmers, knowing we&#039;re all accountable to each other -  and on top of all that, knowing that what I&#039;m getting also tastes better - are more than worth whatever extra I may be paying.  It&#039;s a choice based on the things I value, not a luxury.</description>
