Today’s Tip: Use meat as a condiment.I was reminded of this great tip today when I stumbled upon Mary Jo’s Kitchen on NPR (WMUB).
“We know that for a sustainable world, we should use less meat than we have become accustomed too. I will never suggest that everyone should become a vegetarian, for I still believe in animal husbandry as part of the great agricultural cycle. However I strongly encourage smaller quantities of meats humanely reared and processed.
Thomas Jefferson advised that meat should be used as a garnish. This is the focus in most Chinese cooking and in many cuisines throughout the world where meat is a delicacy, costly and scarce. We can learn to appreciate the flavor in smaller amounts.”
